To understand what we mean by “sustainable food city”, we first need to understand: What does sustainable food mean? People are aware that the food they eat is an important factor affecting their health, but what is less well known is the impact producing and consuming food has on the world's resources and on the environment through greenhouse gas emission, use of land and water resources and pollution. Many people would agree, that “organic” or “fairtrade” is somewhere close to what one would call is sustainable. But even though these terms are clearly defined, the term “sustainable food” has no legal definition.

But how will you know then, which food is sustainable?

 

In our point of view, a perfectly sustainable food has to be produced, processed and traded in ways that include (at least) three aspects:

 

First: It should not damage our natural resources nor contribute to the climate change

through CO2 emissions and protect the diversity of both, plants and animals.

 

Second: It should provide social benefits. That means, the food should have a good quality

and be healthy for the human being.

 

Third: It should contribute to thriving local economies and livelihood – both locally

and in case of imported products, in producer countries.
