“Tell me what you eat and I’ll tell you who you are” was already stated in the early 19th century by Jean Anthelme Brillat-Savarin. But does it really say something about ourselves, do we give a statement by what we are eating? And is that already food culture?

But whether we see it like that or not, eating is actually a moral act, a reflection of our values and beliefs, a reflection of our character so to speak. Why? Because eating indeed makes a political and a moral statement – what we eat affects other people and how the earth is treated. We make a social statement –we eat alone or with our families and friends. Traditionally we used to share food and eat together but this is more and more lost.

Today, there are many kinds of food we can eat, there are new recipes or traditional ones, and also a variety of ingredients we can use to prepare our food. All of this and finally the fact how we consume our food is very much telling us about the actual essence of who we are and where we are from. That is called food culture. (Food and Culture Resources, 2005-2014). This means that for making a city more sustainable, the local food framework should not only provide the sources of regional/local grown and healthy and organic foods to cook with but we also have to offer and create knowledge and opportunities how we can prepare sustainable food or how we can share food and value und enjoy food together (Experimental Station, 2012).
